    Whether skimming the flats with a charter captain or chasing scallops underwater with a snorkel and fins, ethically harvesting the Gulf’s fragile, fantastic bounty defines life (and livelihoods) on the Third Coast. So does eating it. In Alabama and Apalachicola, oysters are back. Bay scallops rule the Panhandle shallows in season, and shrimp–just make sure they’re Gulf-caught–command near every menu, everywhere. Blacken or deep-fry those iconic catches–redfish, drum, grouper–and don’t skimp on the hush puppies. Cold beer on repeat.

    BUSHWACKER

    Boozy frozen cocktail like a creamy, chocolate piña colada. Served with maraschino cherry and often floaters.


    CONCH

    Someone who lives in Key West, self-labeled as the “Conch Republic.”


    FLORIDA LOBSTER

    Also called spiny or rock lobster, it has no claws unlike its New England cousin, so the good eating is in the tail.


    SHOTGUN HOUSE

    Long, narrow houses thought to be an evolution of the African "long house" style brought to Louisiana via Haiti.

    FRED

    Nickname given to blue herons that stalk the shoreline.


    HUSH PUPPY

    Torpedo-shaped cornmeal fritter: a Southern tradition often served with seafood.


    JUBILEE

    Fish and crustaceans densely congregate and launch themselves ashore. Only in Mobile Bay and Tokyo.


    STINGRAY SHUFFLE

    A walking style in the shallows to warn bluntnose stingrays that bury themselves in the sand.

    KEY LIME

    Citrus that is smaller and more yellow than its common green cousin. Accept no substitute in pie or confections.


    LAGNIAPPE

    A Cajun-French word that means something extra, from a small gift to an amuse-bouche at a restaurant.


    NO-SEE-UM

    Tiny biting insects along the coast that are barely visible and can fly through holes in screens.


    THIRD COAST

    The states along the Gulf of Mexico (competes with the Great Lakes for the title).
